One of the typical specialties of the Lodi area is the Raspadura, that is very thin sheets of very young Lodi cheese (7-8 months at most) so called because it is "rasped" from the shape with a special tool: it must absolutely be eaten fresh and it is customary to eat it With the hands. It is usually served as an appetizer, accompanied by a glass of wine.
