Trentino sits on a natural crossroads, a borderland where cultures and climates mingle creating a unique culinary setting. Indeed, Trentino can boast an extraor­dinary wealth of natural products, from apples and vegetables to sausages and salamis, cheese and fresh­water fish to fine wines, craft beers and olive oil. Each local ingredient adds a unique flavour to every dish and the quality of these Trentino products is reflected in its exceptional cuisine.

Indeed, 7 restaurants in Trentino have been award­ed stars by the prestigious «Michelin Guide». In the capital city, the Locanda Margon restaurant has been awarded 1 star. This charming restaurant is renowned for its commitment to experimental cuisine and a mod­ern take on traditional dishes. 

In Cavalese in Val di Fiemme, the El Molin restaurant is particularly noteworthy; occupying the renovated old mill of Palazzo Riccabona, it combines experimenta­tion with tradition. In the Val di Fassa, the Malga Panna has been a bastion of Trentino gastronomy for sixty years and offers interesting variations on traditional Ladin and Trentino dishes. Also, in the Val di Fassa, the L’Chimpl has made a habit of satisfying the most demanding palates with a clever combination of tradi­tional Ladin dishes, a sprinkle of innovation and a dash of creativity. In Madonna di Campiglio too, the pearl of the Dolomites, the Stube Hermitage, Gallo Cedrone and Dolomieu restaurants have managed to combine northern and southern influences in perfect harmony creating delightful and unique dishes. Besides these Michelin-starred restaurants, a range of culinary sur­prises await in any of the numerous mountain huts in Trentino. In winter, many of these welcoming beacons, perched high in the mountains, can also be reached af­ter sunset by snowmobile or snow cat and offer simple yet delicious local cuisine in a cosy, family-run environ­ment. 

The Après-ski scene in Trentino is well-rooted, mixing glamour, fun and a unique way to sit back and relax af­ter a day on the pristine slopes. There are numerous hangouts, bars and restaurants where you can enjoy an aperitif, perhaps a glass of Trentodoc spumante, with friends and skiing companions and maybe order a platter of local cured meats and cheese before dinner. 

Speaking of wines, in 1993 Trentino’s Trentodoc Spu­mante was the first sparkling wine produced using the traditional method, outside Champagne, to win D.O.C status, and the wine has since won a number of international awards. In 2019 once again, as in 2015, the Cantine Ferrari, a Trentodoc wine-maker, has been named Sparkling Wine Producer of the Year at the 2019 Champagne & Sparkling Wine World Champion­ships. 

Centuries of wine-making tradition in Trentino have also witnessed the development of three native grape varieties: Nosiola, Marzemino and Teroldego. However, many other grapes grow exceptionally well in Trentino too, such as the Müller-Thurgau variety in the Val di Cembra. 

A fantastic terroir for wine-making, Trentino’s climate and terrain are also ideal for milk production and dairy products. The fresh grass and wild flowers of the mountain pastures mixed with the crisp mountain air and spring water are what make Trentino’s mountain milk so special. This rich milk is transformed by local farmers into high-quality butter, cheese, and a range of other dairy products. The “Latte in Festa” (The Milk Festival) involves a series of events across Trentino with guided tours, children’s workshops, exhibitions and of course plenty of tasting events! 

The term “Cheesenic”, thanks to an exciting initia­tive, describes a picnic hamper filled with local organic products that can be picked up from participating res­taurants, farms, mountain huts and hotels along the “Dolomites Cheese Route”. The initiative takes place across Trentino throughout the summer and also of­fers a picnic calendar with suggested routes. 

Having said this, dining in Trentino is an exciting expe­rience.
