Tiella is the most famous dish in Gaeta and its preparation is a real rite for every family in the city. We are talking about a portable dish for fishmen and everyone who could not go back home for lunch.

Tiella is maybe also the first Pizza! Considered that in Gaeta was used the word Pizza for the first time in history, testified by a latin manuscript dating back to 997 d.C. conserved in the Museo Diocesano of Gaeta.

Usually tiella is made with olives of Gaeta, anchovies or octopus, garlic, tomato, oil and salt. Respecting the tradition, is later cooked in a circular casserole that gives the specific name to the dish.

Whatever the basic recipe is, every family in Gaeta passes on from generation to generation its own special ingredient, trick or dose that makes it the most delicious in town.
